Nalesniki....

This is my childhood favorite. I wish Conner would try them but as usual he is being stubborn I know that he would like them. I would make them every day!!!


Nalesniki or Crepes

2 cups whole or skim milk
4 eggs
1 tbs. melted butter
pinch of salt
1 cup flour

Beat eggs and milk till well blended. Add melted butter and salt then add the flour. (Batter should be much thinner consistency then for ordinary pancakes) Pour by spoonful of batter on a hot non stick pan tilting the pan to spread evenly. Brown then turn and brown the other side. Fill with your favorite preserve and dust with powder sugar....yummm. My mom used to make a cheese filling but Polish farmers cheese is hard to come by :)

Baby Ethan....

Ethan has been ALL out of sorts lately. As of this morning he is not pushing 2 but 4 teeth!!! Poor baby...and on top of that he woke up this morning with his 1st cold. For about 3 weeks now he will NOT take a pacifier at all. Most people would maybe consider this a good thing but not I. I'm his only source of comfort and weaning him might jus be a nightmare!!!

Salsa....


Salsa

8 cups tomatoes, chopped
5 stalks celery with leaves, chopped
3 medium onions, chopped
2 green peppers, chopped
12 Jalapeno peppers, seeded and chopped
12 oz tomato paste
4 t salt
1/4 cup lemon juice
1/2 cup balsamic vinegar
3/4 cup sugar
2 1/2 Tbs cilantro

Combine together in a large pot. Bring to a boil then pour hot into jars.


NOTES: This is what I made with the goodies I got from my mom and dad and my sister....thanks guys!!!! So that's the recipe and here is what I did different. Instead of using the store bought celery I used about 3 tablespoons of the stuff from my mom and dads garden....it's celery but just leaves and much stronger but sweeter taste. I used 10 Jalapeno peppers 4 seeded 6 unseeded next time I would cut back some more on those. I also used 2 tablespoons fresh parsley, lime juice instead of lemon and I used 2 WHOLE HEADS of roasted garlic I think that REALLY made it for me. Ohh and I used only one red pepper instead of green because that's all I had on hand. Next time I make this and I will for sure I will also roast the red peppers 1st.

It was fun to make because I like chopping and it's always so rewarding to have something completely home made :)

Visit to Rockford....

On Saturday Neal worked and I decided to go to Rockford for the day with the kids!!! Went to my mom and dads in the morning. Conner had fun picking tomatoes, cucumbers, beans, and peppers. We stopped at Neal's mom and dad just for a couple minutes then headed on over to my sisters. Today is actually her (....) b-day :) !!!! Happy b-day sis!!! I hope that you enjoyed the cheese cake I made you!!!

  • my husband who watched the kids and let me sleep most the day so that I could get better

  • and last but not least the fact that I'm going to overlook the mess that surrounds me and go back to bed

LOVE it...

This weather is absolutely amazing. I'm sitting on my bed waiting for the kids to wake up so that I can go running just soaking up the sunshine pouring in....and the breeze ohhh the breeze is just AMAZING. I'm in another place right now....no actually I'm right here :)

Handsome brothers....


Finally finished!!!!

I'm so glad to be finally finished with this project. The mess it created was driving me nuts! I'm happy with the results and Neal likes it too which makes it even better!

I had to re-do the night stand because the paint looked gray blue instead of the black that it was suppose to be. I had to go back to Menards twice to get it adjusted....kinda made me mad.

Bonding....

Can I get an awwww....baby Ethan and his daddy have been bonding. It's easier now that he is on solids!!! Ethan especially likes daddy singing to him!!! Maybe I will actually be able to use my mothers day present soon :)

1st fall recipe.....

I had my sisters kids here for a couple days and as usual we baked lots of yummy things. This weather has been making me crave fall things so we made these. I love these muffins and they are so easy to make the frosting I've never tried before....it's VERY sweet so the kids loved it!!! I could do without it. We also drizzled caramel on top!!!

Muffins

1 spice cake mic
1 can of pumpkin
1/2 cup of water

mix together divide in muffin pan and bake 20-25 min @ 375*

Brown sugar cream cheese frosting

3 ounces softened butter
4 ounces softened cream cheese
1/4 cup dark brown sugar
You want to dissolve the brown sugar a bit, so let this go for 3 or 4 minutes
Beat in
2 cups confectionery sugar, 1 cup at a time
Then add
1 tablespoon half and half
Beat well and add more half and half a tiny bit at a time, until it is of spreadable consistency.

Go Ethan....


I think it would be ok to say that baby Ethan can sit up on his own now!

Can't believe its Wed. already!!! On Saturday we went to the beach again and of course "tall" came with!!! He did not leave Conner's sight for one moment.

My plan was to re-stain the dresser a darker stain because Neal hates painted furniture but it looked terrible stained so instead I painted it distressed it and sealed it in put on some new handles and here it is. I'm actally pleased with the results....and it's much nicer than what it was at least until we can afford to get us a bedroom set. Now I have to do the dresser sometime :)

I thought I would never say this.....

I'm so glad that Conner is sleeping and I DON'T have to talk anymore. I have talked more today then I have ever before. I think he's making up for lost time or something because from the moment he woke up till I put him to bed tonight he did not stop...ahhh it's finally quiet :)
Ohh and his favorite new word is boob...haha...what am I teaching my child. He asked what was I going to tell him. The problem is that he points first then says boob...ohhh boy!!! That one is going to embarrres me for sure :)

Seriously....

Blueberry Muffins....and OHH SO YUMMY....you have to try em....



The Awesome-est Blueberry Muffins

3 cups minus 2 tablespoons flour
1 teaspoon baking soda
2 teaspoons baking powder
Heavy pinch of salt
Dash of Nutmeg
1 cup sugar
1/2 cup vegetable oil
1 egg
1 generous cup plain, unflavored yogurt (throw in extra if you want)
2 cups fresh blueberries
Vanilla Extract
Softened Butter, for muffin tins
Turbinado sugar (optional)

Preheat oven to 385 degrees.

In a large bowl sift flour, baking soda, nutmeg, baking powder, and salt. Set aside.

In another large bowl whisk together sugar, oil, cap-ful of vanilla, egg, and yogurt. Add the dry ingredients and stir to a count of 10.

Add blueberries, reserving 1/2 cup, to mixture and stir 3 times.

Add mixture to well-buttered muffin pans. Sprinkle remaining berries on top and press down lightly. Sprinkle turbinado sugar over top. (Brown sugar can be used instead.)

Bake 20 to 25 minutes and allow to cool completely.

Yogurt-Blueberry Sauce:

In small saucepan over medium-low heat, stir together 1 cup frozen or fresh blueberries (if using fresh, add 2 tsp water) and 1 tsp sugar. Cook until berries pop and liquid begins to thicken. Dump in heaping 1/4 cup plain yogurt and stir to combine. Drizzle on muffins.

I recently restored some REALLY old pictures for my mom. I really like this picture because it shows how time has changed the way we dress the way we do our hair the way we carry ourselves and the way technology has changed. This is my G'ma and G'pa and my mom is the little girl on the right :)This is the only picture I have of me as a little girl...can you guess which one is me?!?!? I wonder what I looked like as a baby :) I think this was my G'ma and G'pas anniversary!!

My sisters girls came to stay with us for a few days and so did Kasia. It was a fun time....we had movie marathons, went to the lake, I spoiled them with manicures and pedicures. We baked cookies and went to the park....so fun to have them around :)
