why do I do this to myself....

PW's Coffee Cake Literally

CAKE
2 cups flour
2 cups white sugar
1/4 teaspoon salt
2 sticks (1 cup) regular (salted) butter
3 tablespoons instant coffee (I used Folger’s Crystals)
1/2 cup buttermilk
2 eggs
1 teaspoon baking soda
2 teaspoons vanilla

Preheat oven to 350 degrees. Grease and flour two round baking pans.

Add 3 tablespoons to 1 cup boiling water. Set aside.
In a large bowl, mix sugar, flour, and 1/4 teaspoon salt.
In a separate bowl, add buttermilk, eggs, baking soda, and vanilla.

Combine above ingredients, then pour into pans. Bake for 20 to 22 minutes or until set.

Allow to cool completely.

FROSTING

Well I think I used about 1 cup heavy whipping cream to make whipped cream 1 full thing of cream cheese 3/4 cup powdered sugar 1 tablespoon or so of instant coffee some vanilla ohh and white chocolate.

make the whipped cream and melt the chocolate set aside whip the cream cheese sugar vanilla and coffee then add the melted chocolate and fold into the whipped cream.

this is exactly why we all pork up in the winter! lol today my snacking has consisted of...donuts from the orchard, chocolate candies with a freshly brewed starbucks coffee (not to mention the fancy creamers i have to have to even drink coffee).... ho hum its just so darned good! can't wait try some of that coffee cake.

Now THAT is my kinda dessert! If I'm gonna eat dessert, I might as well do it RIGHT! LOL! Sounds absolutely heavenly...I may just have to try it...and then add 10 miles to my weekly runs for a while! :) Gotta love the cold weather months, like Angie said!
